Almond Joy Brownies

Not as innocent as my past few recipes. But totally worth it.

Ingredients
  • 1 c. whole wheat pastry flour
  • 1/2 t. baking soda
  • 3/4 t. salt
  • 1/2 c. shredded coconut
  • 1/2 c. oats
  • 1/2 c. chopped almonds
  • 1/2 c. dark chocolate chips
  • 1/2 c. brown sugar
  • 1/4 c. almond butter- I used hazlenut butter, which I know doens't make sense, but I was too annoyed with my handicapped shopping cart at Target to pay close enough attention to what I was purchasing
  • 1/4 c. unsweetened applesauce
  • 1/4 t. coconut extract
  • 2 T. agave
  • 1/4 c. unsweetened almond milk
Instructions
  • Preheat oven to 350 degrees. Spray an 8X8 pan with cooking spray and set aside.
  • In a large bowl, combine flour, baking soda, salt, coconut, oats, almonds and chocolate chips.
  • In a smaller bowl, mix remaining ingredients. Add wet mixture to dry and stir until combined.
  • Bake for 20-25 minutes, until set and golden brown around edges.
  • Let cool before cutting into bars.
