Ingredients
1 c. Quinoa
1 red bell pepper
(Any other southwestern type veggie you would want to add...corn, tomato, jalapenos, you can get creative)
black beans
1/2 T Cumin
olive oil
Instructions
First, get Quinoa cooking as directed on package. Should take about 20 minutes.
In the meantime, saute the bell pepper in the olive oil until tender. This is where you would add any other veggie you like, I added some little sweet pepper we got at the Farmer's Market. After the veggies are tender, add the black beans and Cumin. Cook until beans are warm.
Add Quinoa to the pan with the peppers and beans, stir, and enjoy!
Now, you can eat this plain by itself and it would be delicious. I put some cheese in a whole wheat tortilla, added the stuffing, and topped it with some of my favorite Costco brand salsa. You could also...
- Gut out some squash or bell pepper, roast in the oven at 450 for 25 minutes and stuff with stuffing.
- Add on top of some greens for a southwestern salad
- Eat it as a dip with some tortilla chips
