-2 tablespoons milled flax seed
-2 cups whole wheat flour
-1 1/2 teaspoons baking powder
-1/2 teaspoon baking soda
-1/2 teaspoon salt
-1/2 tablespoon cinnamon
-1/4 cup canola oil
-1 cup unsweetened almond milk
-1/2 cup real maple syrup
-squeeze of lemon juice
-1/2 cup blueberries
-1 cup diced peach slices
Preheat oven to 375. Mix dry ingredients. Mix wet ingredients. Combine, but don't mix too much unless you want blue batter! Put into muffin tins and bake for 20-30 minutes. The juices from the fruit tend to make the muffins moist, so be wary when deciding if the muffins are done.
