Sweet Potato Fries

I used to hate sweet potatoes. But about a year ago, I went through this phase of falling in love with foods I had always hated. Sweet Potatoes. Milk. Cheese. In fact, I ate so many sweet potatoes my first year of college, I feared I might actually turn orange.

No worries.

I retained my normal skin pigmintation. So, feel free to eat as many of these delicious, salty, treats as you woud like.



1 large sweet potato
1 T olive oil
several shakes of salt
1/2 t. paprika

1. Preheat oven to 425. Cut sweet potato into 1/4 inch thick fries.
2. Place fries in large ziploc bag, olive oil, salt, and paprika. Shake bag until fries are coated with oil and seasonings.
3. Line a cookie sheet with foil. Place fries on sheet in a single layer.
4. Cook fries for 25 minutes, broil the fries for the last 2-3 minutes---be careful not to burn!
5. Serve with bbq sauce, ketchup, mustard, ranch, etc...!!
