Vanilla Scones

Usually when I try to make something cute and trendy, like scones, it ends up turning out NOTHING like it is suppossed to. Wrong texture, shape, whatever. But this recipe actually turned out miraculously well. Its probably because I followed the recipe exactly, instead of trying to "healthify" it by modifications. Hmmm...

Ingredients (12 scones)
  • 1 c. whole wheat pastry flour
  • 3/4 c. whole wheat flour
  • 1 T. baking powder
  • 1/2 t. salt
  • 1/2 c. butter
  • 1/2 c. milk
  • 1/3 c. brown sugar
  • 1/2 T vanilla extract- or scraping from one vanilla bean (but thats only if you are a little richer than me...did you know that, at Sprouts, ONE vanilla bean is $4!!!??? Yeah right)
Instructions
  • Preheat your oven to 350 degrees.
  • In a large bowl, combine flours, baking powder and salt.
  • Add the cold margarine to the flour. I like to flick little pieces into the flour using a knife.
  • In a small bowl or liquid measuring cup, combine milk, sugar and vanilla.
  • Add vanilla milk mixture to flour mixture and stir just until combined. Do not overmix.
  • Turn dough out onto a floured board.
  • Using a floured pin, roll dough into a rectangle, about 1 1/2 inches thick.
  • Cut the rectangle into six squares,
  • and then cut each square into two triangles.
  • Carefully transfer scones to a baking sheet using a spatula.
  • Bake for 20 to 25 minutes, until scones are starting to brown slightly and are firm to the touch. Transfer to a cooling rack.
  • Scones and coffee. Delightful.
