Spiced Chickepea and Feta Sandwiches

I had Karmen over for lunch today. She was very brave. Chickpeas? On a sandwich? Okay, yeah, sounds weird. However, they were actually quite delicious. In a vegetarian-sandwich kind of way.

1 can chickpeas (garbonzo beans)
3/4 t. chili powder
1/2 t. cumin
1 t. coriander
1/2 t. caraway seeds
1 1/2 t. garlic powder
4 t. lemon juice
1 T olive oil
2 medium tomatoes, sliced
8 slices whole wheat bread
16 fresh basil leaves
1/3 c. feta cheese
1/2 c. grated carrot

1. Combine chickpeas, all of the spices, lemone juice, and olive oil in a food processor. Pulse until chicpeas are coarsley chopped and slightly pasty, but not too smooth!
2. Spread some olive oil on one side of all 8 slices of bread. Broil in the oven for just a few minutes until lightly toasted. The olive oil adds such a good flavor to the toast!
3. Spread chickpea mixture on all bread slices. Top four pieces with tomatoes, then basil, feta, and carrot. Top with remaining bread slices. Makes 4 sandwiches.
