Rosemary Foccacia Bread

Ingredients (1 loaf)
  • 1 1/2 c. warm water
  • 1 packet of yeast
  • 1/2 tsp. brown sugar
  • 1/2 tsp. salt
  • 2 T chopped fresh rosemary
  • 1 T. olive oil + extra for drizzling
  • ~3 1/2 c. whole wheat pastry flour
  • parmesan cheese
  • sea salt
Instructions
  • Dissolve yeast in warm water and brown sugar and let sit for 10 minutes.
  • Add salt, olive oil, rosemary, and flour.
  • Keep kneading more flour in until dough is no longer sticky
  • Move dough to oiled bowl and let rise ideally for 45 minutes to an hour.
  • Preheat oven to 425 degrees, using a pizza stone, if available.
  • Form dough into a round loaf and make small finger size indentations over surface of dough.
  • Drizzle with olive oil and sprinkle with parmesan cheese and sea salt.
  • Bake for approximately 15 minutes.

I made mine in to two loaves

You could even incorporate the parmesan cheese into the dough if you want more of a cheesy flavor. I would have, but didn't think about it until after my dough was already rising...shucks.

You could sub out the olive oil, cheese, and rosemary in this recipe for different flavors. Maybe lemon pepper? Cinnamon raisin? Basil and sun-dried tomatoes with cheddar (my mother suggested this one)?
